Nonna’s GF Pasta Fagioli Soup

Nonna's Gluten Free Pasta Fagioli Soup
A classic Italian dish made from simple ingredients to create a magical, healthy dish.
Ingredients
- 2 cups canned pinto beans drained
- 2 cups canned cannellini beans drained
- 1/4 cup extra virgin olive oil
- 1 cup Clara's marinara sauce
- 1/4 cup diced pancetta, guanciale, or bacon* (see notes)
- 1 medium yellow onion diced
- 3 finely chopped garlic cloves
- 4 cups water
- 1 lb gluten free pasta
- Grated parmesan cheese to top
Instructions
- Sauté the olive oil, garlic, and onion until the onion is tender.
- Add sauce and cook together for 10-15 minutes
- Add the beans and water and cook for about 20-25 minutes
- Add pasta and cook pasta according to the time on the box
- Once pasta is cooked turn off the heat and allow it to sit for 30 minutes
- Serve with fresh grated parmesan on top and a drizzle of extra virgin olive oil.

Notes
*Note: Vegans omit the pancetta, guanciale or bacon and parmesan.
Recipe can be made non gluten free by just replacing the pasta.
