French Classic now made gluten free. These GF Madeleines are light, fluffy and delicious. Even better they are made without any gums, premade flours, soy, or nuts. So everyone can enjoy them.
Ingredients
Love Life and Pizza Gluten Free Madeleines
Dry:
3/4 cup sorghum flour
1/4 cup millet flour
1/2 cup tapioca starch
1 tbsp baking powder
1/2 cup sugar
Wet:
2 eggs, slightly beaten
1 tsp vanilla
1 stick unsalted butter melted
1 tbsp lemon zest (optional)
Instructions
Preheat Oven 350F degrees.
Whisk all the dry together in a medium bowl.
In a small bowl whisk the eggs and vanilla, then add the egg mixture to the dry mixture and whisk well, slowly add the butter and lemon zest and whisk until creamy and smooth. Let rest 10 min, then pour batter into the forms and bake at 350F degrees for 8-9 minutes DO NOT OVERFILL FORMS.
Allow to cool, then remove from form and place on cooling rack.
OPTIONAL: Add icing to half the cookies and decorate as wanted, or make a simple syrup and brush the madeleines when they come out of the oven.
