Gluten Free Flourless Banana PB Chocolate Chip Pancake

Makes 2 medium pancakes

2 organic eggs

1 ripe organic banana

1 tsp vanilla extract

2 tbsp organic peanut butter

1/2 tsp sea salt

1 tsp organic cinnamon

1/2 cup chocolate chips

Mash banana in medium bowl. Then add all the remaining ingredients and beat until smooth. Add chocolate chips and pour into hot skillet. Flip over when bubbles begin to form all over. When cooked place on plate and add your favorite toppings. I added fresh organic strawberries, organic maple syrup and some coconut whipped cream.

These are absolutely delicious and super easy and quick to make. They are packed with protein and a nice breakfast treat that’s healthy. I love this recipe and hope you do too!
