St Patty's Day GF Whisky Butterscotch Surprise Cookies

These Gluten Free Cookies are an absolute treat for St Patty's Day. They are chewy, high in protein, full of pure yumminess!

Ingredients

  • Dry Ingredients:
  • 3/4 cup sorghum
  • 1/3 cup tapioca flour
  • 1/2 cup Caputo pea flour
  • 1 tsp baking soda
  • 1 tsp vanilla powder
  • Wet Ingredients:
  • 1 stick soft unsalted butter
  • 1 egg
  • 1 tsp sea salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 tsp Jameson whisky
  • Add Ins:
  • 1 cup butterscotch chips
  • Green sprinkles
  • Peanuts
  • Coarse Sea Salt
  • Mini Marshmallows

Instructions

  1. Whisk all the dry ingredients together in medium bowl
  2. In mixer using paddle attachment add the wet ingredients and mix well.
  3. Slowly add the dry mixture into the wet until mixed well.
  4. Fold in butterscotch chips and 2 tbsp green sprinkles
  5. Fridge dough for 1 hour
  6. Preheat oven 350F degrees
  7. Parchment line baking sheets
  8. Place 1 tbsp of cookie dough per cookie and top each with marshmallows, peanuts, sea salt and sprinkle with green sprinkles.
  9. Bake for 11 minutes
  10. Cool down on wire rack and ENJOY!
