Gluten Free Apricot Jam Bars

Perfect treat for any occasion. The bar is almost like a blondie in texture, the flavors are amazing. These bars quickly became a requested item from friends and family. You can use any jam or even try Nutella, any choice will surely make these delicious.

Ingredients

  • Wet Ingredients:
  • 1 cup sour cream
  • 1/2 cup olive oil
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 tsp sea salt
  • Dry Ingredients:
  • 1 cup sorghum flour
  • 1/3 cup tapioca starch
  • 1 cup coconut flour
  • 2 tsp baking powder
  • 8 oz jar of Apricot Jam (or favorite flavor)

Instructions

  1. Preheat oven 350F degrees
  2. Grease a 9-inch square pan and line with parchment on bottom
  3. Whisk all dry ingredients in a medium bowl set aside
  4. In large bowl with mixer at medium speed beat all the wet ingredients together until well blended.
  5. Slowly add dry ingredients to wet mixture and beat at well until smooth and creamy (will be a bit thick)
  6. Pat the dough in greased pan and top with apricot jam spread evenly all over top of the dough.
  7. Bake 350F degrees for approx 35 minutes until edges begin to brown slightly.
  8. Let cool approx 3 hrs before cutting squares.
  9. Enjoy!

Notes

*NOTE: You can use any flavor jam you like or even try Nutella (yum).

This dough can also be used for blondies just add chocolate chips and a layer on top as well. ENJOY
