Clara's Gluten Free Sugar Cookies

These soft and moist sugar cookies are perfect for any holiday or event.

Ingredients

  • Dry Ingredients:
  • 1 cup sorghum flour
  • 1/3 cup tapioca flour
  • 1/3 sweet white rice flour
  • 3/4 cup GF oat flour
  • 1tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup sugar
  • 5 tbsp powdered sugar
  • Wet Ingredients:
  • 1 stick softened butter
  • 1 egg
  • 2 tsp vanilla powder
  • 5 tbsp water plus 3 tsp whole psyllium husk mix make gel

Instructions

  1. In a large bowl mix all dry ingredients together.
  2. In a mixer bowl mix the water and psyllium husk to create a gel, then add butter and eggs. Beat until well blended. Slowly add the dry ingredients until blended.
  3. Cover and refrigerate for 1 hour
  4. Preheat oven 375F degrees
  5. Line 2 cookie sheets with parchment paper and lightly spray each one
  6. Roll out dough (not too thin) and cut out your favorite cookie shapes
  7. Place cookie shapes on the parchment lined cookie sheets
  8. Bake at 375F degrees for 12-14 until golden on edges
  9. Cool on wire rack
  10. Frost with your favorite icing recipe
  11. ENJOY!
