Summer Avocado Pasta

Summer Avocado pasta is healthy, quick, and easy to make and a crowd-pleaser every time.

Ingredients

  • 1 lb pasta (GF pasta)
  • 3 tbsp salt (for pasta water)
  • 6 large avocados
  • 2 cups chopped cherry tomatoes
  • 2 cloves fresh garlic finely chopped
  • 2 tbsp sea salt
  • 2 tbsp extra virgin olive oil
  • 1/2 cup fresh basil

Instructions

  1. Boil and salt your water with the 3 tbsp salt
  2. Mash all the avocados in a large serving bowl
  3. Add garlic, sea salt, and olive oil, mix until smooth and creamy
  4. Cook pasta
  5. Add chopped cherry tomatoes to the avocado mash
  6. Strain pasta and add to the avocado-tomato mixture
  7. Coat pasta with avocado-tomato mixture and top with some fresh cherry tomatoes and fresh basil...ENJOY!
