Summer Avocado Pasta
Summer Avocado pasta is healthy, quick, and easy to make and a crowd-pleaser every time.
Ingredients
- 1 lb pasta (GF pasta)
- 3 tbsp salt (for pasta water)
- 6 large avocados
- 2 cups chopped cherry tomatoes
- 2 cloves fresh garlic finely chopped
- 2 tbsp sea salt
- 2 tbsp extra virgin olive oil
- 1/2 cup fresh basil
Instructions
- Boil and salt your water with the 3 tbsp salt
- Mash all the avocados in a large serving bowl
- Add garlic, sea salt, and olive oil, mix until smooth and creamy
- Cook pasta
- Add chopped cherry tomatoes to the avocado mash
- Strain pasta and add to the avocado-tomato mixture
- Coat pasta with avocado-tomato mixture and top with some fresh cherry tomatoes and fresh basil...ENJOY!
