New Years Eve Lentils and Sausage

Gluten Free Italian Tradition on New Year's Eve is to have Lentils with Sausage to bring wealth and abundance into the new year.Vegan option available

Ingredients

  • Green or Brown Organic Lentils
  • Extra Virgin Olive Oil
  • Fresh Garlic Cloves
  • 32 ounces Organic Vegetable Broth
  • Organic Carrots
  • Organic Celery
  • Fresh Basil
  • Organic Onion
  • 16 ounces San Marzano crushed tomatoes
  • Bay Leaves
  • White Wine
  • Sea salt
  • Fresh Grated Parmigiano Reggiano (optional)
  • 4 links Fresh Pork Sausage

Instructions

  1. Step 1: Wash and drain lentils, and allow lentils to soak in fresh filtered water for about an hour, the lentils will absorb the water and become soft.
  2. Step 2: In a food processor, chop the onion, carrots, celery, and garlic until fine. This is the soffrito.
  3. Step 3: In a large pot add olive oil to coat the bottom of the pan, allow to heat up then add the soffrito, bay leaves, and fresh basil. Allow to cook for 2-3 minutes. Then add the lentils and white wine, and allow the wine to cook off stirring continuously once the wine is cooked off and the San Marzano tomatoes and vegetable broth. Season with salt and allow to simmer for about 45 minutes. If the liquid is absorbed you can add water.
  4. Step 4: While lentils are cooking preheat oven to 425F degrees, prepare a cookie sheet with parchment, and place sausage on the sheet pan. Poke sausage with a fork a few times to allow juices to flow while cooking. Cook sausage for 20 min on each side, or until golden brown on each side.
  5. Step 5: Allow the sausage to rest for 5 minutes then slice and add the lentils. Stir together and shut off the heat after 5 minutes. Cover and allow to rest.
  6. Step 6: Serve in a bowl topped with freshly grated imported Parmigiano Reggiano cheese, and to add a nice touch drizzle some quality extra virgin olive oil on top.

Notes

*Note: You can make this dish vegan by not adding the sausage or parmesan cheese, you can substitute nutritional yeast for the cheese for added flavor.
