The most delicious GF Vegan Banana Bread. Made with only high quality organic or NON GMO ingredients, without any pre-made flour mixes or gums. So moist and fluffy, it's a family favorite.
Ingredients
Wet Ingredients:
6 mashed ripe bananas
1 tsp vanilla extract
1/3 cup olive oil
3/4 cup maple syrup
3 tbsp flax seed mixed with 1/2 cup water to form a gel
Dry Ingredients:
1/3 cup tapioca flour
1 cup sorghum flour
1 cup sweet white rice flour
1 cup millet flour
1 tsp sea salt
1/2 tsp cinnamon
3 tsp baking powder
1 tsp baking soda
2 cups non dairy chocolate chips
2 tsp Sugar in Raw (for sprinkling on top of bread once in pans)
Instructions
Preheat oven 375F degrees
Grease 2 standard bread loaf pans
In large bowl mash the bananas until creamy
Add all the wet ingredients into the banana mixture and mix well
In a medium bowl whisk together all the dry ingredients except for chocolate chips
Add the dry to the wet ingredients and whisk well until nice creamy batter forms
Fold in chocolate chips
Pour batter into greased loaf pans
Sprinkle top with coarse Sugar in the Raw
Bake 375F degrees for 40 min, toothpick comes out clean
Cool on wire rack for at least 1 hour before slicing...ENJOY!
