Gluten Free Chocolate Zucchini Bread

Decadent Gluten Free Chocolate Zucchini Bread is moist, rich and absolutely delicious.

Ingredients

  • Wet Ingredients:
  • 2 cups shredded Zucchini
  • 3 organic eggs
  • 1/2 cup olive oil
  • 1/2 cup non dairy milk
  • 2 tsp vanilla extract
  • 1 cup organic agave
  • Dry Ingredients:
  • 1 heaping cup sorghum flour
  • 1/3 cup tapioca flour
  • 1/3 cup sweet white rice flour
  • 1/2 cup almond flour*
  • 3/4 cup pure cocoa powder
  • 1 tsp sea salt
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • 2 cups chocolate chips

Instructions

  1. Preheat Oven 375F degrees. Grease two bread loaf pans.
  2. Whisk together all the dry ingredients in a medium bowl
  3. Whisk all the wet ingredients together in a large bowl, with exception of zucchini.
  4. Once all the wet is mixed, then add the zucchini. Mix well.
  5. Slowly fold dry ingredients into the zucchini mixture, mix until all well blended.
  6. Fold in chocolate chips
  7. Pour batter into greased loaf pans.
  8. Bake at 375F degrees for 25 min. then reduce temp to 350F degrees and bake another 15 min. until toothpick comes out clean.
  9. Cool on wire rack for 1 hour before slicing...ENJOY!

Notes

*If allergic to nuts you can sub the almond flour with tiger nut flour.

When using cocoa powder make sure to purchase a pure organic cocoa for best results.
