Gluten Free Apple Cider Donuts

The perfect start to fall with seasonal apple cider.

Ingredients

  • Dry Ingredients:
  • 1 cup GF oat flour
  • 1 cup sorghum flour
  • 1/4 cup tiger nut flour
  • 1/3 cup potato starch
  • 1tsp salt
  • 2 tsp cinnamon
  • 1 tsp fresh nutmeg
  • Wet Ingredients:
  • 2 eggs
  • 3/4 cup fresh apple cider
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract
  • 12 tbsp softened butter
  • Sugar Coating:
  • 3 tbsp melted butter
  • 1/2 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat oven at 350F degrees
  2. Grease donut forms, set aside
  3. in medium bowl mix together all the dry ingredients with a whisk, set aside.
  4. In a large mixer, cream butter, then add maple syrup, brown sugar continue mixing.
  5. Add eggs, and vanilla beat until creamy and well blended.
  6. Slowly add the dry mixture in 3 parts and apple cider in 2 parts. Alternating each one until all mixed well. Battery will be smooth and creamy.
  7. Pour into greased donut forms and bake at 350F degrees for 8-10 min, until toothpick comes out clean.
  8. Cool donuts at least one hour to prevent cracking.
  9. Remove donuts from forms and place on parchment paper.
  10. Melt the 3 tbsp of butter.
  11. Mix the 1/2 cup sugar with cinnamon in a shallow bowl that will fit a donut with extra room.
  12. Using a sicilone brush, brush one donut at a time with butter all around then coat in the cinnamon sugar on both sides. Set each donut on parchment paper to allow them to rest.
  13. Once all are coated place on serving platter and enjoy!

Notes

The donuts are very delicate and moist so be careful when holding them while coating. They taste best after a few hours or even a day later...if you can resist :)
