Gluten Free Amaretto Tiramisu (no eggs)

GLUTEN FREE AMARETTO TIRAMISU is my twist on the Italian Classic the Tiramisu. You will love it's rich, creamy consistency along with the delicious touch of amaretto. Making it the perfect dessert "pick me up".

Ingredients

  • CREAM:
  • 1 qt heavy cream
  • 4 cups mascarpone cheese
  • 2 tbsp vanilla extract
  • 2 tbsp amaretto liquor
  • 2 tbsp agave
  • AMARETTO COOKIE SOAK:
  • 2 packages of Lazzaroni Amaretti Di Saronno (GF) cookies
  • 2 cups of fresh brewed espresso coffee
  • 2 tbsp amaretto liquor
  • 2 tbsp organic blue agave
  • WHIP TOPPING:
  • 1 quart Heavy Cream
  • 1 tbsp agave
  • Cinnamon to garnish

Instructions

  1. Brew 2 cups of espresso, set aside..
  2. In a mixer bowl whip CREAM heavy cream with honey and vanilla until stiff peaks form, set aside.
  3. In a mixing bowl at high speed mix mascarpone and amaretto liquor until smooth and creamy
  4. Slowly fold the heavy cream into mascarpone mixture until smooth, set aside over bowl of ice to keep cold or place in fridge.
  5. Next, our hot brewed espresso, agave and amaretto liquor into a shallow dish deep enough to hold the liquid, and mix all together well, set aside.
  6. In a mixing bowl whip the the WHIP TOPPING heavy cream and agave together until stiff peaks form. Set aside for the topping layer.
  7. In a rectangle 9x12 dish or individual serving cups, begin assembling tiramisu.
  8. Begin with a layer of CREAM mixture across the bottom of the dish
  9. Next, very quickly soak the amaretto cookies (they absorb very quick) in the espresso mixture, and place a single layer over the cream mixture.
  10. Repeat process again for two layers.
  11. Last, top the dessert with the WHIP TOPPING and sprinkle with cinnamon.
  12. Refrigerate at least 2-3 hours before serving.
