Gluten Free Vegan Chocolate Sprinkle Cookies

Perfect treat for any party. These soft, chewy and delicious gluten free vegan cookies will make any person a happy one.

Ingredients

  • Wet Ingredients:
  • 13.5oz can of Coconut Cream
  • 1 cup Agave
  • 1/3 cup Olive Oil
  • 6 tbsp Flax Seed
  • 1 cup Water
  • Dry Ingredients:
  • 1 cup pure Cocoa Powder
  • 1 1/2 cup Sweet White Rice Flour
  • 1/3 cup Tapioca Flour
  • 1 1/2 cup Sorghum Flour
  • 1 cup Millet Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Powder
  • 1 tsp Cinnamon
  • 1 tsp Sea Salt
  • 2 cups dairy free Chocolate Chips

Instructions

  1. Pre-heat Oven 350F degrees. Line 3 baking sheets with parchment and lightly grease them.
  2. In a small bowl mix the 1 cup of water with the 6 tbsp of flax seed to create a gel like liquid.
  3. In a medium bowl whisk together all the dry ingredients
  4. In a mixer bowl add all the wet ingredients including the flax seed gel. Mix well at medium speed, slowly add the dry ingredients until all mixed well.
  5. Fold in the chocolate Chips
  6. Use a one ounce ice cream scooper to place cookie dough on prepared baking sheets.
  7. Bake 350F degrees for 14 min
  8. Cool on wire rack.
Vanilla Icing
  1. 3 1/2 cups sifted powdered sugar
  2. 2 tbsp coconut milk
  3. Sift powdered sugar into a medium bowl add the coconut milk and mix well until smooth and creamy.
  4. Drizzle each cookie with icing and add your favorite sprinkles.
  5. ENJOY!

Notes

Holiday Variations you can add crushed candy canes, holiday sprinkles and color the icing by adding your favorite natural coloring.
