Nonna's Gluten Free Pasta Fagioli Soup

A classic Italian dish made from simple ingredients to create a magical, healthy dish.

Ingredients

  • 2 cups canned pinto beans drained
  • 2 cups canned cannellini beans drained
  • 1/4 cup extra virgin olive oil
  • 1 cup Clara's marinara sauce
  • 1/4 cup diced pancetta, guanciale, or bacon* (see notes)
  • 1 medium yellow onion diced
  • 3 finely chopped garlic cloves
  • 4 cups water
  • 1 lb gluten free pasta
  • Grated parmesan cheese to top

Instructions

  1. Sauté the olive oil, garlic, and onion until the onion is tender.
  2. Add sauce and cook together for 10-15 minutes
  3. Add the beans and water and cook for about 20-25 minutes
  4. Add pasta and cook pasta according to the time on the box
  5. Once pasta is cooked turn off the heat and allow it to sit for 30 minutes
  6. Serve with fresh grated parmesan on top and a drizzle of extra virgin olive oil.

Notes

*Note: Vegans omit the pancetta, guanciale or bacon and parmesan.


Recipe can be made non gluten free by just replacing the pasta.
