Amazing Gluten Free Sprinkle Cookies

These are easy, delicious gluten free sugar cookies my kids and I love making. We like to add rainbow sprinkles or chocolate chips to the recipe too!

Ingredients

  • 1/2 cup (1 stick) softened organic unsalted butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg slightly beaten
  • 1 tsp vanilla extract
  • 1/4 cup nondairy milk (or any milk)
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 cup tapioca flour
  • 1 cup gluten free oat flour
  • 1 cup white rice flour
  • natural dye free rainbow sprinkles or chocolate chips or get crazy and do both :)

Instructions

Cookie Dough Preparation
  1. In a large mixer bowl with paddle attachment cream butter and sugars, then add egg, vanilla and milk. Mix well.
  2. In a medium bowl mix all the remaining dry ingredients (except sprinkles or chips) together and whisk.
  3. Slowly add the dry ingredients to the wet and beat in mixer until mixed well. Dough will be soft.
  4. Fold in one cup of sprinkles or chocolate chips
  5. Refrigerate dough AT LEAST 2-3 hours to make firm, this is essential
  6. Use a 1 oz ice cream scooper or tablespoon to place cookie dough on prepared greased parchment paper cookie sheets
  7. Sprinkle tops with more rainbow sprinkles and place in oven
  8. Bake 350F degrees 12-14 min until slightly golden on edges. Do not overbake or they will become crunchy not chewy.
