Gluten Free Flourless Peanut Butter Blossom Cookies

Our family favorite holiday cookie. Easy to make, quick to prepare. A holiday must make!

Ingredients

  • 1 cup organic creamy peanut butter
  • 1/4 cup powdered sugar
  • 1/2 cup dark brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 24 unwrapped Hershey Kisses
  • 1/4 cup granulated sugar for coating

Instructions

  1. Preheat oven 350F degrees
  2. Line two baking sheets with parchment paper
  3. In a mixer bowl, add all ingredients and mix with paddle attachment until well blended. Mixture will be soft and crumbly
  4. Roll dough into 1 inch balls and coat each ball in the granulated sugar
  5. Place on cookie sheet and bake at 350F degrees for 10 min
  6. Remove from oven and place Hershey kisses in middle of each cookie, pressing down gently
  7. Transfer cookies to wire rack to cool. ENJOY...they won't last 30 minutes :)

Notes

*Colored granulated sugars are also fun to roll balls of dough into to give the cookies a festive look.
