Gluten Free Vegan Chocolate Banana Muffins

Gluten Free Vegan Chocolate Banana Muffins make a delicious treat anytime and can also be made into cupcakes just add your favorite frosting. These are made with no gums, premade flours, soy or corn, They are absolutely delicious and you'll want to make them all the time.

Ingredients

  • Dry Ingredients:
  • 1 1/2 cups sorghum flour
  • 1/2 cup chickpea flour
  • 1/3 cup tapioca starch
  • 1 tsp sea salt
  • 4 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup cocoa powder
  • Wet Ingredients:
  • 4 ripe mashed bananas
  • 1 cup olive oil
  • 1 tsp vanilla
  • 3/4 cup agave
  • 1/2 cup non dairy milk
  • 1/4 cup flax seeds meal + 1/2 cup water= gel
  • Add Ins:
  • Chocolate Chips

Instructions

  1. Preheat Oven 350F degrees. Grease or line cupcake tins.
  2. Whisk all dry together in large bowl set aside.
  3. In mixer beat all the wet then slowly add the dry. Mix until smooth and creamy. Fold in chocolate chips.
  4. Pour into muffins tins and sprinkle tops with chocolate chips.
  5. Bake 350F degrees 20-25 min.

Notes

For cupcakes add your favorite frosting.
