Gluten Free Baked Zucchini Frittters

Gluten Free Baked Zucchini Fritters are the perfect summer snack. Light, delicious, and healthy. They are super easy to make and ready in 25 minutes.

Ingredients

  • 3 cups shredded zucchini
  • 10 eggs
  • 1 cup grated parmesan
  • 1 cup Caputo Polenta flour
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp baking powder
  • 1 tsp chopped fresh basil

Instructions

  1. Preheat oven 400F degrees and grease 2 muffin trays
  2. Whisk eggs in a large bowl
  3. Add spices and cheese and continue whisking
  4. Add shredded zucchini and polenta flour and keep whisking until well blended
  5. Pour into greased muffin tins and bake at 400F degrees for 20 minutes (when touched they should spring back up)
  6. Cool on rack for 5-10 minutes ENJOY!!!
